Almond tarts with canned peaches

  • Canned peaches drained
  • 100g sugar
  • 100g butter
  • 100g almond powder
  • 1tbsp lemon juice
  • zest of 1 lemon
  • 80g soft margarine
  • 250g whole wheat biscuits
  • 2 large eggs

Blend biscuits and margarine for 15”. Beat butter & sugar.

Mix in eggs, lemon zest & juice. Fold in almond powder.

Divide biscuit mixture into tart  tins & fill them with the almond cream.

Bake at 180°C/ 350°F for 12′. Let them cool completely.
