Instructions: Lay the puff pastry on a non-stick pan which you have oiled with butter or olive oil. Pour the white sugar, vanilla, cognac, 2 spoonfuls of brown sugar and the canned peach juice in a pot. Simmer at a very low temperature until mix is homogenized. Let it cool for a while and then carefully add the canned peaches. Stir lightly and spread the mix on the puff pastry. Sprinkle with brown sugar and bake for approximately 15 minutes at 180οC, until the pastry is golden.
